A home-made, as best as you can make, corn tortilla using yellow “criollo” corn imported from Oaxaca, “nixtamal” (cooking corn with mineral lime), and corn grinding using a traditional volcanic rock mill also made in-house, each tortilla is hand pressed and cooked in a “comal” right before it is served.
Our chips – we call them “cacalas” – are not fried, they are toasted over cherry wood fire.
